Die Vieilles Vignes von Jacques Baissas geben einen Hektarertrag von 35 Hl/ha ab (ein geradezu lächerlich geringer Wert für das Languedoc).
Der Wein wird dann 18 Monaten in Barriques ausgebaut und das Ergebnis ist schlichtweg perfekt. Aromen von roten und schwarzen Beeren. Ein feiner Holzton, eine unmerkliche Säure. Eleganz und Kraft pur.
