Marc und Joel Delgoulet haben vor 25 Jahren das dreihundert Jahre alte Weingut übernommen. Die Pflege der Reben erfolgt ohne Einsatz von chemischen Hilfsmitteln. Stattdessen wird mit Kupferkalkbrühe oder Schwefelblume gearbeitet. Die Hauptrebsorte des Cahors ist Auxerrois (auch Malbec oder Cot genannt). Ein Charakteristikum dieser Rebsorte ist ihr natürlicher Gehalt von Hefe. Dadurch kann Joel vollständig auf das zusetzen von künstlichen Hefen beim Gärvorgang verzichten. Der Ausbau der Weine erfolgt in Edelstahl oder 900 l - Fässern auf französischer Eiche. Joel legt Wert auf die Feststellung, daß die Cuvée Orphée ausschließlich in Vogesen-Eiche ausgebaut wird. Die Weine werden weder geschönt noch gefiltert. Die Cahors-Weine galten in früheren Jahren aufgrund der sehr intensiven Gerbstoffe der Malbec-Rebe als ausgesprochen hart und kräftig. Marc und Joel Delgoulet haben gründlich mit diesem Vorurteil aufgeräumt und präsentieren uns Weine die bereits früh in der Trinkreife sind, dabei aber über ein ungeheures Lagerpotential verfügen. Mit der Cuvée Orphée haben sie es auf die Speisekarten der deutschen Top-Restaurants geschafft (Tantris, Alfons Schuhbeck). Orphée besteht zu 100 % aus Malbec-Trauben. Der Hektarertrag betrug für den Jg. 2000 gerade einmal 30 hl./ha, die 18 Monate in neuen Eichenfässern ausgebaut wurden. Das Bouquet ist erfüllt von Aromen von schwarzer Johannisbeere, Waldpilze, Pflaume und Zimt und Röstaromen. Die Tannine sind seidig und voll eingebunden. Ein wahres Kraftpaket dessen Aromen noch eine halbe Minute am Gaumen anhalten. Der Wein ist bereits jetzt trinkreif und lagerfähig bis ca. 2030. Der Wein wurde von der Zeitschrift Feinschmecker zu den 100 besten Weinen 2004 gewählt. Die Weine werden in 6er HK geliefert.
